Mason Jar Soups

First there was the mason jar salad, now we have the mason jar soup.

 Simply pack a jar full of fresh vegetables, healthy fats, and protein, add hot water and in 5 minutes you’ve got yourself a warm and nutritious meal. Just like the salad, you can make several of these ahead of time and enjoy throughout the week.


Here are some tips to building your own mason jar soup and a few recipes to try.

1. Create a flavorful base

  • Pack in the flavor by adding fresh or dried herbs, seasoning blends, fresh lemon or lime juice, pesto, tomato sauce, curry powder, coconut milk, coconut oil, sesame seed oil, ghee, olive oil, coconut aminos, fresh garlic, fresh ginger, etc. ( you get the idea?)

2. Noodles

  • Raw or cooked
  • spiralized or grated
  • zucchini, carrots, sweet potatoes, shredded cabbage, or bean sprouts.

3. Vegetables

  • Cooked or raw
  • Fresh or frozen
  • If using raw vegetables, the hot water will simply soften them, it will not cook them. If you are not a fan of super crunchy, raw vegetables in your soup, you will want to cook them first. Be sure to let them cool before adding to your jar.
  •  Squash, chopped bok choy, spinach, kale, bell pepper, snap peas, broccoli, cauliflower, carrots, celery, green onion, mushroom, etc.

4. Protein

  • Cooked meats only
  • Hard boiled eggs, chicken, steak, ground meats, precooked sausages, etc.

When ready to eat…

  1. Boil water in a kettle or microwave.
  2. Let boiled water sit for a minute or two before adding to the jar.
  3. Add water to jar, leaving a half inch at the top (so it doesn’t overflow).
  4. Seal jar with lid and shake vigorously. Let sit for 5 minutes.
  5. Remove lid and enjoy.


Instant Chicken Curry Soup

For the curry sauce:

1 tablespoon curry powder
1 teaspoon coconut oil
3/4 cup canned coconut milk
Juice of 1/2 a lime
1 teaspoon fresh ginger, minced
Pinch of salt and pepper
Pinch of red pepper flakes (optional)

Layer ingredients in the following order:

Sweet potato noodles ( raw or cooked)
Carrots
Red pepper
Green onion
Fresh cilantro
Chicken
Cabbage

Directions:

  1. Combine all ingredients in the order listed in a quart size mason jar. Refrigerate until ready to eat.
  2. When ready boil water in a kettle or microwave.
  3. Let boiled water sit for a minute or two before adding to the jar.
  4. Add water to jar, leaving a half inch at the top (so it doesn’t overflow).
  5. Seal jar with lid and shake vigorously. Let sit for 5 minutes.
  6. Remove lid and enjoy.

 


Pesto Chicken Instant Zoodle Soup

For the pesto:

1 large handful of fresh basil leaves
1 clove garlic
1 tablespoon extra virgin olive oil
Juice of 1/2 lemon
Pinch of salt and pepper

*Blend all ingredients until smooth and place at the bottom of the jar.

Layer ingredients in the following order:

Fresh diced tomatoes
Green onion
cooked chicken
Zucchini Noodles

Directions:

  1. Combine all ingredients in the order listed in a quart size mason jar. Refrigerate until ready to eat.
  2. When ready boil water in a kettle or microwave.
  3. Let boiled water sit for a minute or two before adding to the jar.
  4. Add water to jar, leaving a half inch at the top (so it doesn’t overflow).
  5. Seal jar with lid and shake vigorously. Let sit for 5 minutes.
  6. Remove lid and enjoy.
