Got 2 minutes? Well that’s all it takes to make this egg salad. I’m a little embarrassed to admit it, but I eat this meal at least twice a week for lunch or breakfast. I’ll occasionally add in some diced apples or vegetables, but most of the time, I really just don’t have the time. This truly is an on the go meal.
