Curried Chicken Salad

This is by far my favorite chicken salad recipe. It is a knock off from the one they serve in the pre-made food section at The Good Food Store. I altered the recipe a bit and switched out the mayo with my own to make it Whole30 compliant. I hope you enjoy it as much as I do.

Curried Chicken Salad
Course Main Dish
Prep Time 10 minutes
Servings
Ingredients
  • 1/2 cup whole30 approved mayonnaise
  • 1 tablespoon curry powder
  • 2 cups cooked chicken
  • 1 small apple diced
  • 2 scallions diced
  • 2 ribs celery diced
  • 1/4 cup almond slivers
  • Juice of 1/2 lemon
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

  • 1 tablespoon curry powder
  • 2 cups cooked chicken
  • 1 small apple diced
  • 2 scallions diced
  • 2 ribs celery diced
  • 1/4 cup almond slivers
  • Juice of 1/2 lemon
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
Instructions
  1. In a large mixing bowl combine mayonnaise and curry powder.
  2. Next, add in all remaining ingredients and mix well.

The CostCare BootCamp is the venue to bring our dietary platform, medical practice, nutritional research, and exposure of the food industry all together. This BootCamp is truly a dream I have thought about for 5 years. Our team is excited to bring it to you!
