Time to spice up those sweet potatoes! This recipe goes great with pork carnitas or any kind of southwestern inspired meal.

Ingredients
- 3 large sweet potatoes peeled and cut into 3/4-inch pieces
- 3 tablespoons avacado or coconut oil
- 1/2 teaspoon salt
- 2 teaspoons chilli powder
- 1 teaspoon garlic powder
- 1/8 teaspoon cayenne
- 1/2 teaspoon finely grated fresh lime zest
- 1 tablespoon fresh lime juice
- 1/4 cup chopped fresh cilantro

Instructions
- Preheat oven to 425°F.
- Toss sweet potatoes with 2 tablespoons oil and 1/4 teaspoon salt arrange potatoes in a single layer on a baking sheet lined with parchment paper. Roast, stirring halfway and cook until tender, about 25 minutes total.
- While potatoes are roasting, mix together in a medium-sized bowl remaining 1 tablespoon oil, lime juice, chili powder, garlic powder, cayenne, lime zest, and remaining 1/4 teaspoon salt.
- Add roasted potatoes to mixture and toss to incorporate . Top with cilantro and serve immediately.
