Sweet Potato Toast

Toast without the bread? You bet ya!




Sweet potato toast is made in your toaster and takes about 10 minutes or less depending on how thick you slice your sweet potato. The slicing is the trickiest part and you may have to give it a few attempts before you become a sweet potato toast master. Load your toast up with your favorite toppings for breakfast or pile on some deli meat for a sandwich at lunch. Really, who needs bread?


Here is a fun video from Delish showing you how to make sweet potato toast. ***Disclaimer– this video shows the use of peanut butter and jelly as a topping. Sorry, this is not an approved Whole30 topping. Substitute with almond butter and fresh fruit.

  • 1 large sweet potato
  • your choice of toppings

Instructions
  1. Slice sweet potato lengthwise into 1/4 inch slices
  2. Place slices into toaster and toast at the highest setting.
  3. Check sweet potato slices and re-toast as needed. Usually takes about 2-3 times at the highest setting.
