This recipe can be made with or without Mayonnaise. If you’re not a fan of mayonnaise, use one whole mashed avocado as a replacement.

Ingredients
- 6 hard-boiled eggs diced
- 1/2 ripe avocado diced
- 1/4 cup whole30 approved mayonnaise
- 2 celery ribs diced
- 2 scallions diced
- 4 slices Whole30 approved bacon chopped (optional)
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- Juice of 1/2 a lime
- Dash of smoked paprika

Instructions
- In a large mixing bowl combine eggs, avocado, mayonnaise, celery, scallions, bacon, salt, pepper, and lime juice, mix well.
- Garnish with a sprinkle of smoked paprika.
