A simple recipe that the whole family will love!



I use this asain salad mix from Costco when I make this recipe. I just discard the salad dressing and simply pick out the the wonton strip and give them to the kids.  Any pre-package coleslaw mix will work as well.


The leftovers are great for breakfast too. Just reheat and top with a fried egg. That is, if you have any leftovers.

Prep Time 5 minutes
Cook Time 15 minutes
Servings
Ingredients
  • 1 pounds ground pork chickenchicken,or turkey
  • 1 16 ounce bag coleslaw mix
  • 2 tablespoons sesame oil
  • 3 tablespoons coconut aminos
  • 1 1/2 tablespoons rice wine vinegar check your labels for sugar!
  • 1 1/2 teaspoon fresh grated ginger
  • 2 garlic cloves minced
  • 1 1/2 cups sugar snap peas optional
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon black sesame seeds
  • garnish with fresh cilantro, chopped almonds, and/or chopped scallion optional

Instructions
  1. In a large skillet, brown the pork over medium-high heat.
  2. Add fresh grated ginger and minced garlic, stir and cook for 2-3 minutes.
  3. Add coleslaw mix, sugar snap peas (or any additional vegetables you like), sesame seed oil, coconut aminos, and rice wine vinegar. season with salt and pepper. Sauté until coleslaw mix becomes tender.
  4. Stir in sesame seeds and serve immediately. Garnish with fresh cilantro, chopped scallions , and/or chopped almonds.
