Ch Ch Ch Chia! No, these are not the same seeds from the early 90’s that you would slather on a ceramic pet and “water and watch them grow”(click here for some nostalgia). Chia seeds are considered a superfood, packed with antioxidants, fiber, quality protein, and omega-3 fatty acids. Easy to make, chia seed pudding can be assembled ahead of time and left to soak overnight for a quick grab and go breakfast the next morning.

- 1 cup of fresh or frozen blackberries
- 1/2 cup chia seeds
- 1 can unsweetened coconut milk
- 1/2 cup water
- chopped pistachio’s used as garnish
- shredded unsweetened coconut flakes used as garnish

Instructions
- In a small mixing bowl, crush berries with a fork so that they’re the consistency of a thick jam. *If using frozen berries, microwave on high for 30 seconds to defrost before crushing.
- Add chia seeds, coconut milk, and water.
- Stir to combine.
- Transfer to an airtight container and refrigerate overnight.
- Sever cold and top with fresh berries, pistachio’s, and shredded unsweetened coconut flakes.
