Overnight Blackberry Coconut Chia Seed Pudding With Pistachio’s

Ch Ch Ch Chia! No, these are not the same seeds from the early 90’s that you would slather on a ceramic pet and “water and watch them grow”(click here for some nostalgia). Chia seeds are considered a superfood, packed with antioxidants, fiber, quality protein, and omega-3 fatty acids. Easy to make, chia seed pudding can be assembled ahead of time and left to soak overnight for a quick grab and go breakfast the next morning.

Blackberry Coconut Chia Seed Pudding with Pistachio’s

Servings
Ingredients
  • 1 cup of fresh or frozen blackberries
  • 1/2 cup chia seeds
  • 1 can unsweetened coconut milk
  • 1/2 cup water
  • chopped pistachio’s used as garnish
  • shredded unsweetened coconut flakes used as garnish

Ingredients
  • 1 cup of fresh or frozen blackberries
  • 1/2 cup chia seeds
  • 1 can unsweetened coconut milk
  • 1/2 cup water
  • chopped pistachio’s used as garnish
  • shredded unsweetened coconut flakes used as garnish
Instructions
  1. In a small mixing bowl, crush berries with a fork so that they’re the consistency of a thick jam. *If using frozen berries, microwave on high for 30 seconds to defrost before crushing.
  2. Add chia seeds, coconut milk, and water.
  3. Stir to combine.
  4. Transfer to an airtight container and refrigerate overnight.
  5. Sever cold and top with fresh berries, pistachio’s, and shredded unsweetened coconut flakes.
