Fall is quickly approaching and already the coffee shops are advertising their seasonal lattes. And I’m sure we can all agree that this time of the year, the hands down favorite is….. the pumpkin spice latte.
Don’t worry, you don’t have to miss out on this seasons favorite cup of Joe just because you’re cutting the sugar and dairy. This recipe uses real pumpkin and coconut milk, making it not only delicious, but healthy as well.
And just in case you are wondering, a 12oz Starbucks Pumpkin Spice latte has 300 calories and a whopping 39grams of sugar!

Ingredients
- 1 cup pumpkin puree
- 1 can light coconut milk
- 2 dates pitted
- 3/4 tablespoon pumpkin pie spice
- 1/2 vanilla bean ( cut pod and scrape out the seeds) OPTIONAL
- pinch salt

Instructions
- Combine all ingredients into a blender and blend on high for about one minute. Poor creamer into an airtight container and store for up to a week in your refrigerator.
- Shake vigorously before each use.
- Poor in your coffee, stir, and enjoy.
