Ingredients
- 1 Pound whole30 compliant sweet Italian sausage
- 1 tablespoon extra virgin olive oil
- 1 small onion chopped
- 2 garlic cloves minced
- 1 can diced tomatoes
- 1 large sweet potato cubed, yam
- 4 cup whole30 compliant chicken broth 1 carton
- 1 bunch fresh kale chopped

Instructions
- Brown sausage in a large pot over medium heat. Drain and set aside.
- Heat 1 tablespoon of olive oil over medium heat and add in diced onions. Cook 4 to 5 minutes, stirring occasionally, until soft.
- Add in minced garlic and cook 1 to 2 minutes, stirring occasionally.
- Return ground sausage to the pot and add in tomatoes, cubed sweet potatoes, 4 cups chicken broth, and chopped kale.
- Bring to a boil and then reduce to a simmer, stirring occasionally, cook 15 to 20 minutes until potatoes are tender.
- Season to taste with salt and pepper and serve.
Recipe Notes
*Note- If you are replacing the sausage with ground meat or poultry, you will want to add in 1 tablespoon of Italian seasoning at step #4.
