Sausage, Sweet Potato, & Kale Soup

Quick, easy, and versatile. This hearty soup is sure to warm you up on a fall or winter evening. You can customize it anyway you please.  Switch out the ground sausage for linked sausage or any other ground meat, red or russet potatoes instead of sweet, and you can even switch out the kale for Swiss chard, or spinach.

Ingredients
  • 1 Pound whole30 compliant sweet Italian sausage
  • 1 tablespoon extra virgin olive oil
  • 1 small onion chopped
  • 2 garlic cloves minced
  • 1 can diced tomatoes
  • 1 large sweet potato cubed, yam
  • 4 cup whole30 compliant chicken broth 1 carton
  • 1 bunch fresh kale chopped

Ingredients
  • 1 Pound whole30 compliant sweet Italian sausage
  • 1 tablespoon extra virgin olive oil
  • 1 small onion chopped
  • 2 garlic cloves minced
  • 1 can diced tomatoes
  • 1 large sweet potato cubed, yam
  • 4 cup whole30 compliant chicken broth 1 carton
  • 1 bunch fresh kale chopped
Instructions
  1. Brown sausage in a large pot over medium heat. Drain and set aside.
  2. Heat 1 tablespoon of olive oil over medium heat and add in diced onions. Cook 4 to 5  minutes, stirring occasionally, until soft.
  3. Add in minced garlic and cook 1 to 2 minutes, stirring occasionally.
  4. Return ground sausage to the pot and add in tomatoes, cubed sweet potatoes, 4 cups chicken broth, and chopped kale.
  5. Bring to a boil and then reduce to a simmer, stirring occasionally, cook 15 to 20 minutes until potatoes are tender.
  6. Season to taste with salt and pepper and serve.
Recipe Notes

*Note- If you are replacing the sausage with ground meat or poultry, you will want to add in 1 tablespoon of Italian seasoning at step #4.
