Apricot Spinach Breakfast Meatballs

Warning: These are so good you won’t want to share!

I love these breakfast meatballs! They are my favorite grab and go breakfast. I make a batch almost every week to have on hand for when I’m in a pinch and don’t have time to eat at home. And they aren’t just for breakfast . I eat these as a post workout snack and have even made them for dinner.  I got the inspiration for this recipe from one of my favorite blog sites, The Real Food Dietitians and their Apricot-Basil Meatballs.  I just switched out the ground pork for breakfast sausage and cut the recipe down to just four ingredients.


*Note: If you are not a fan of apricots or are having trouble finding apricots without added sulfites, you can switch them out with dried unsweetened cranberries or cranberries sweetened with apple juice.

Apricot Spinach Breakfast Meatballs
Course Breakfast
Prep Time 10 minutes
Cook Time 15-20 minutes

Ingredients
  • 1/2 pound ground turkey or ground chicken
  • 1/2 pound Whole30 compliant breakfast sausage
  • 1 cup fresh spinach chopped
  • 1/4 cup dried apricots or cranberries chopped
Course Breakfast
Prep Time 10 minutes
Cook Time 15-20 minutes

Ingredients
  • 1/2 pound ground turkey or ground chicken
  • 1/2 pound Whole30 compliant breakfast sausage
  • 1 cup fresh spinach chopped
  • 1/4 cup dried apricots or cranberries chopped
Instructions
  1. Preheat oven 400ºF.
  2. Combine all ingredients in a mixing bowl and mix well with hands.
  3. Form mixture into 15 meatballs and place on baking sheet (for easy clean up line baking sheet with parchment paper).
  4. Bake in oven for 15 minutes or until cooked through.
