Warning: These are so good you won’t want to share!
I love these breakfast meatballs! They are my favorite grab and go breakfast. I make a batch almost every week to have on hand for when I’m in a pinch and don’t have time to eat at home. And they aren’t just for breakfast . I eat these as a post workout snack and have even made them for dinner. I got the inspiration for this recipe from one of my favorite blog sites, The Real Food Dietitians and their Apricot-Basil Meatballs. I just switched out the ground pork for breakfast sausage and cut the recipe down to just four ingredients.
*Note: If you are not a fan of apricots or are having trouble finding apricots without added sulfites, you can switch them out with dried unsweetened cranberries or cranberries sweetened with apple juice.

Ingredients
- 1/2 pound ground turkey or ground chicken
- 1/2 pound Whole30 compliant breakfast sausage
- 1 cup fresh spinach chopped
- 1/4 cup dried apricots or cranberries chopped

Instructions
- Preheat oven 400ºF.
- Combine all ingredients in a mixing bowl and mix well with hands.
- Form mixture into 15 meatballs and place on baking sheet (for easy clean up line baking sheet with parchment paper).
- Bake in oven for 15 minutes or until cooked through.
