Overnight Triple Berry Almond Chia Seed Pudding

Ch Ch Ch Chia! No, these are not the same seeds from the early 90’s that you would slather on a ceramic pet and “water and watch them grow”(click here for some nostalgia). Chia seeds are considered a superfood, packed with antioxidants, fiber, quality protein, and omega-3 fatty acids. Easy to make, chia seed pudding can be assembled ahead of time and left to soak overnight for a quick grab and go breakfast the next morning.

Triple Berry Almond Chia Seed Pudding
Prep Time 10 minutes
Cook Time 4-12 hours
Servings
Ingredients
  • 1 cup fresh or frozen strawberries blueberries, and raspberries.
  • 1/2 cup chia seeds
  • 2 tablespoon almond butter
  • 1 teaspoon cinnamon
  • 2 cups unsweetened almond milk
  • fresh berries and chopped almonds for garnish optional
Prep Time 10 minutes
Cook Time 4-12 hours

Ingredients
  • 1 cup fresh or frozen strawberries blueberries, and raspberries.
  • 1/2 cup chia seeds
  • 2 tablespoon almond butter
  • 1 teaspoon cinnamon
  • 2 cups unsweetened almond milk
  • fresh berries and chopped almonds for garnish optional
Instructions
  1. In a small mixing bowl, crush the berries with a fork so that they’re the consistency of a thick jam. *If using frozen berries, microwave on high for 30 seconds to defrost before crushing.
  2. Add chia seeds, almond milk, cinnamon, and almond butter.
  3. Stir to combine.
  4. Transfer to an airtight container and refrigerate overnight.
  5. Serve cold and top with fresh berries and chopped almonds.
